Healthy breakfast cookies with nuts and dried fruit

Ingredients

  • Oat flakes
  • 1 egg white
  • Tahini
  • Pitted dates
  • Raisins
  • Sunflower seeds
  • Chia seeds
  • Goji berries
  • Pumpkin seeds

Preparation

  1. Preheat the oven to 180°C.
  2. Blend the dates with a little water until a paste is obtained
  3. Mix all the dry ingredients in a large bowl
  4. Add the wet ingredients and mix
  5. Drop spoonfuls onto a baking tray lined with baking paper, spacing them well apart
  6. Press them lightly to flatten them
  7. Bake for about 15 minutes
  8. Leave to cool
