All-chocolate cookies with pistachios

Ingredients

  • 150 g dark chocolate
  • 100 g butter
  • 120 g brown sugar
  • 1 egg
  • 150 g flour
  • 25 g unsweetened cocoa powder
  • 1/2 packet baking powder (approx. 5 g)
  • 1 pinch of salt
  • 50 g Fidafruit green pistachios

Preparation

  1. Preheat the oven to 180°C (fan-assisted).
  2. Melt the chocolate and butter together in a bain-marie or in the microwave (in 30-second intervals). Mix well.
  3. In a salad bowl, whisk the sugar and egg until you get a frothy texture.
  4. Add the melted chocolate-butter mixture and mix well.
  5. Incorporate the flour, cocoa, baking powder and salt by sifting the powders to avoid lumps. Mix until a smooth dough is obtained.
  6. Form balls of dough (approximately the size of a walnut) and place them on a tray lined with baking paper.
  7. Sprinkle each cookie with crushed pistachios, pressing lightly so they adhere.
  8. Bake for 10 to 12 minutes (the cookies should still be slightly soft in the centre).
  9. Leave to cool on the tray for a few minutes before transferring to a rack.
