All-chocolate cookies with pistachios
Ingredients
- 150 g dark chocolate
- 100 g butter
- 120 g brown sugar
- 1 egg
- 150 g flour
- 25 g unsweetened cocoa powder
- 1/2 packet baking powder (approx. 5 g)
- 1 pinch of salt
- 50 g Fidafruit green pistachios
Preparation
- Preheat the oven to 180°C (fan-assisted).
- Melt the chocolate and butter together in a bain-marie or in the microwave (in 30-second intervals). Mix well.
- In a salad bowl, whisk the sugar and egg until you get a frothy texture.
- Add the melted chocolate-butter mixture and mix well.
- Incorporate the flour, cocoa, baking powder and salt by sifting the powders to avoid lumps. Mix until a smooth dough is obtained.
- Form balls of dough (approximately the size of a walnut) and place them on a tray lined with baking paper.
- Sprinkle each cookie with crushed pistachios, pressing lightly so they adhere.
- Bake for 10 to 12 minutes (the cookies should still be slightly soft in the centre).
- Leave to cool on the tray for a few minutes before transferring to a rack.
