Fresh summer salad with almonds, dried apricots and feta
Ingredients
- 80 g arugula or baby greens
- 6 to 8 dried apricots, sliced
- A handful of whole, lightly toasted almonds
- 100 g crumbled feta
- 1/2 cucumber, half-sliced
- A few fresh mint leaves
- 1 tbsp sesame seeds (optional)
- Juice of 1/2 lemon
- 2 tablespoons olive oil
- Salt, pepper
Preparation
Preparation:
- Mix delicately and serve well chilled.
- Season with lemon juice, olive oil, salt and pepper.
- Add the chopped mint leaves and, if you like, the sesame seeds.
- In a large salad bowl, mix the rocket, cucumber, feta, apricots and almonds.
- Cut the dried apricots into thin slices.
- In a dry frying pan, lightly toast the almonds until they become crunchy and fragrant. Leave to cool.
