Fresh salad with nuts and dried fruit

Ingredients

  • A small bunch of fresh mint
  • 1 tbsp pumpkin seeds
  • 30 g cranberries or raisins
  • 40 g roughly chopped roasted walnuts or almonds
  • 50 g crumbled feta
  • 1 handful of white or black grapes (halved, seedless)
  • 1 ripe peach (or nectarine), sliced
  • 150 g baby greens (lamb's lettuce, arugula, fresh spinach)

Preparation

Preparation:

1. Place the young shoots in a large salad bowl.

2. Add the peach slices, the halved grapes and the feta.

3. Sprinkle with nuts/almonds, cranberries and pumpkin seeds.

4. Mix the vinaigrette ingredients and pour just before serving.

5. Finish with a few chopped mint leaves for freshness.

Gourmet tip

If you enjoy more pronounced sweet-savoury flavours, replace the feta with fresh goat's cheese and add a little fresh fig. A treat!
